Nuance & Notes

By the Still captures the feeling of a warm day unfolding slowly - fresh, vibrant, and generous, with flavours that move easily from savoury to sweet and back again. It carries a Mediterranean lift throughout: herbs warmed by the sun, citrus brightness, orchard fruit ripening nearby, and a gentle saline pull that keeps everything lively. Time in a French oak ex-Port barrel brings aromatic finesse and structure, layering soft spice and dark fruit depth into the profile. This is a whisky that feels open and inviting, with warmth that refreshes.

Nose

Bright and welcoming.

Sweet vanilla and dried fruit rise first, followed by fresh citrus - lemon peel and zest - giving immediate lift. A light buttery richness sits underneath. Herbal notes follow: rosemary and fennel seed, green and aromatic, a reminder of warm air drifting through a summer kitchen. 

Palate

Fresh and mouth-warming.

The palate opens with a savoury–sweet interplay: salted rosemary butter with lemon zest, melting over warm bread. Orchard fruit carries through - stone fruit and gentle sweetness - while vanilla ice cream adds a creamy softness.

Herbal notes return with clarity: rosemary and fennel seed bring lift and definition, joined by a dry aniseed warmth reminicent of fine grappa. Citrus brightens the centre, keeping the palate alert and vibrant. A light astringency gives shape and energy, making each sip feel clean and moreish.

Finish

Easy, warming, and refreshing.

Salted citrus peel, vanilla cream, and soft orchard fruit linger, followed by herbal freshness and a final flicker of aniseed warmth. The finish leaves the palate gently warmed and lightly salivating - fresh, alive, and ready for another sip.
