It began with one idea: to create Australian whisky worthy of the world stage. No shortcuts. A distillery built from scratch, and a promise sealed in the first barrel.

From the start, Coburns was shaped by more than spirit alone. Inspired by great journeys, it’s made to travel. Each bottle marks a place, a moment, a memory.

We filled our first barrel in 2017 and let time lead the way. Seasons passed, character deepened, and we waited until the whisky itself told us it was ready. Patience wasn’t a delay, it defined us.

From Dream, to Dram.

Coburns began with a quiet promise: to raise a glass of 20-year-old Australian whisky on a 70th birthday, one worthy of the world stage and the Coburns name.

At 49, Mark said it out loud, and once said, it had to be done. He built the distillery himself, by hand and by instinct, driven by a founder’s stubborn optimism.

A jeweller by trade, Mark understands the power of anticipation, that moment before the reveal. At Coburns, that philosophy carries through from the unzipping of the trunk to the first pour into the glass.

Everything is intentional: the way it’s packed, the way it pours, the way it lands.

Exceptional whisky begins with more than barley, oak, and time. It begins with place.

That’s why we built Coburns in the Southern Highlands of New South Wales, where nature quietly offers the perfect canvas for world-class single malt.

Our Burrawang distillery sits 770 metres above sea level on the edge of Australia’s largest peat bog. Pure spring water, crisp nights, and warm Highland days create conditions where whisky develops remarkable depth and character.

It’s no coincidence our whisky is earning international recognition. The Highlands provide not just scenery, but a unique rhythm of climate that shapes every barrel, every drop, every glass.

From the beginning, we set our sights not on hype, but on history. We believed Australia could craft a whisky to rival the world’s best, so we took our time. Years passed, barrels matured, and character deepened. When the moment came, the whisky didn’t need to shout, it spoke for itself.

That belief has since been rewarded with over 90 medals including Double Golds in San Francisco, Liquid Gold in Jim Murray’s Whisky Bible, and the title of Best Cask Strength Whisky in Australia.

We never set out to be prolific, only exceptional.
