Excellent whisky can’t be rushed.
At Coburns, time isn’t an ingredient, it’s a partner. From our first barrel filled in 2017, we chose patience over urgency, letting the whisky grow into itself before ever sharing it with the world.
We follow the pace of the seasons, the rhythm of the Highlands, and the quiet certainty that maturity cannot be manufactured. When the whisky is ready, we know. And only then do we let it go.
We Build What We Need
We craft our whisky the same way we built our distillery: by hand, with purpose, and without shortcuts.
Our stills weren’t ordered from a catalogue. They were designed, engineered, and built in-house for one reason: flavour.
Every weld, every valve, every curve of copper comes from a founder’s belief that if you want something done properly, you make it yourself.
We Honour Place
Coburns exists because of the Southern Highlands: crisp nights, warm days, pure natural spring water, and air that carries the rhythm of the seasons straight into the barrel. Burrawang isn’t a backdrop. It’s a contributor.
Its climate breathes depth, structure, and richness into every drop. We don’t fight it, we follow it.
