Nuance & Notes

Like the first warmth after winter, Persephone arrives with lightness and quiet energy. Finished in ex-Port French oak, this whisky speaks of spring in motion — sweet grain and honeycomb at the fore, balanced by a gentle saline warmth that keeps the palate alert. Notes of sticky fruit appear with air, led by the glossy tang of plum skin rather than cooked sweetness, adding depth without weight. As it opens, waxy texture, soft vanilla pod, and a lightly drying structure emerge, giving shape and movement. Persephone does not linger — she passes through the palate with lift and clarity, leaving a mouth-watering impression of renewal and return.

Nose

Sweet grain opens the glass — pale malt and damp cereal — followed by a waxy lift of beeswax and honeycomb. Dry, aromatic vanilla pod emerges next, more husk than cream. With air, sticky fruit develops, led by the glossy tang of plum skin and warm fruit jam. A faint rubbery note sits quietly beneath, lending depth and freshness without weight.

Palate

The palate opens quietly and takes time to build. Sweet, wet grain leads — malted barley and soft cereal — before dried fruit settles in: prunes and dark stone fruit, glossy rather than spiced. 

Honeycomb threads through the mid-palate, coating lightly, while vanilla pod adds warmth and structure. 

A gentle salty heat develops — mouth-warming rather than spicy — tightening the sweetness and keeping the profile lifted and alive. Texture becomes waxy and lightly tannic, encouraging another sip.

Finish

Clean, drying, and salivating. 

Sweet grain, dried fruit, vanilla husk, and beeswax fade into soft tannin and a lingering trace of salty warmth. 

The impression is of movement and renewal — a whisky that lifts away rather than settles, carrying the energy of early spring.
