Nuance & Notes

Zosim is a whisky of timing and contrast. It begins with restraint, holding back its sweetness, before releasing it with intent. Umami-led, aromatic notes set the frame, while depth from sherry and dark fruit gathers beneath the surface. Richness arrives later — honeyed, nutty, and warming — then tightens again into energy and lift. A measured finish in French oak ex-Port adds cohesion and structure, guiding the transition from savoury to sweet, stillness to heat, comfort to clarity. Zosim doesn’t settle into indulgence; it moves through it, leaving warmth, alertness, and a lingering sense of vitality.

Nose

Savoury and aromatic, restrained at first.

Wet cereal and soft grain open the glass, followed by umami notes of soy and seaweed. Beneath this, sherried depth begins to emerge — dried raisins, dark cherry, and plum skin — adding weight and warmth without sweetness rushing forward.

Fresh basil brings a green, herbal lift, while dry coconut husk, pencil shavings, and polished oak add structure. Sweetness remains held in reserve, dark and concentrated rather than bright.

Palate

Sweetness arrives fully at the centre.

A rich bloom of wildflower honey and baklava unfolds — nutty, layered, and generous — wrapped in a creamy, warming texture and soft toffee.

Sherried fruit grows louder through the mid-palate: raisins, stewed plum, and dark cherry flesh, carried by buttery weight rather than sharpness.

New oak tightens the frame with fresh wood, coconut, and gentle dryness, while umami and light salinity keep the sweetness poised.

Heat builds steadily — mouth-warming rather than hot — bringing spice, wood, and peppery energy before lifting away.

Finish

Warming and persistent.

Sherried fruit and honeyed nuts fade into spice-led oak and gentle char. Coconut, fresh wood, and lingering dried fruit echo softly as peppery tingles gather at the edges, leaving the palate awake, lifted, and quietly invigorated.
